January is here in full force. It’s cold outside, the days are shorter, and everything feels a bit rushed. My taste buds are changing as well. My usual salad-based dinners are not as appealing and I’m craving dishes that bring warmth and comfort.
As I’ve been adding more soup, stews, and chili to the dinner menu, I’m noticing a few sideways stares from the family. Um, mom, are we having chili again?
Once I hear this I know it’s time to bring out the skillet. A skillet dinner is a one-pan meal that contains all the food groups, all in one place. Mine are usually a play on chili, but with less liquid and more stuff. I usually include a protein, a few types of veggies, and always a grain or bean (or sometimes both).
One-post skillet dinners are not only easy, they are quick to whip up, and require little skill. First things first, you must have yourself a good skillet. I recommend a good cast iron skillet. They are inexpensive and last forever. Once you get the hang of using one, it will be your go-to kitchen pal.
